Trilobite Apricot Blend 2 — Wild Ale 7%

This blend of our golden sour came out of white wine and bourbon barrels after a 15 month mixed culture fermentation. It then spent 2.5 months in our oak foeder with 220 g/l of apricots.

Over time, the IPA category has splintered further into a dozen sub-styles: Every color, every strength, every possible combination of yeast strains

This blend was made of beer that spent one to four years in barrels, then aged with fruit purées and juice of cherries and blackberries.
