Petit Framboise — Wild Ale 5.2%

This small beer is the second runnings of a barley wine mash, known as the parti-gyle technique. The wort went into our oak foeder on top of the spent raspberries from our Local Framboise. Vigorous fermentation ensued, with a healthy culture of saccharomyces, brettanomyces and lactobacillus in the foeder. After 3 months it went off the berries and had 3 months of maturation in steel tank. Naturally carbonated in the bottle.
